In order to prosper, businesses must take the lead and move in the direction of innovation rather than staying with the tried and true. In this issue, we offer a variety of articles that explore how to move forward with current trends and carve out new paths as well.

In The Large Park Report, Contributor Chad Emerson examines how celebrity chefs are improving the food service outlook at the nation’s parks. And in our annual examination of the fair and festival industry, our writers explore traveling entertainment trends, food service and staffing.

In the Waves waterpark section, we look at the latest trends in indoor waterparks, and in the Family Entertainment Center Report, in addition to regular features, we offer special Face 2 Face Entertainment Conference stories. The event is a three-day experience of in-depth business discussions led by industry experts. The next conference is scheduled for February 24-26, 2015 in Phoenix, Ariz.

There are also a number of other valuable educational opportunities coming up in early 2015. January 20-22, a Foundations Entertainment University seminar will take place in Phoenix, Ariz. February 3-7, the Gibsonton Extravaganza and Trade Show will be held, and February 2-4, the NICA event is scheduled. Both Gibsonton and NICA take place in Florida. Additionally, Amusement Expo 2015 is slated for March 24-26 in Las Vegas, Nev.

TAP’s coverage of food service operations at leisure entertainment facilities is unmatched. In this issue, we offer stories covering fun foods at family entertainment centers and creating interesting new menus at zoos and botanical gardens, including the bonus sidebar “Crafting a Menu Full of Good Sellers: Five Tips.” Additionally, in the Street Beat section, we offer stories covering trends in machine payment options and the new game and machine outlook for 2015.
